Coconut Poppy Seed Cake

Ingredients

  • 8 oz cake mix
  • 1 tsp Goodman's Natural Coconut Extract
  • 2 boxes instant coconut cream pudding
  • ½ tsp Goodman's Natural Coconut Extract
  • 8 oz Dream Whip or Cool Whip
  • ½ tsp Goodman's Natural Coconut Extract
  • shredded coconut optional

Instructions

  • Prepare cake mix as directed.
  • Add poppy seeds and 1 tsp Goodman's Coconut Flavor to batter.
  • Bake, as usual, in a 9 x 13 pan sprayed with nonstick spray.
  • Remove from oven and let cool.
  • Prepare pudding using ½ cup less milk than box instructions require for each box.
  • Add ½ tsp Goodman's Coconut Flavor to pudding.
  • Refrigerate.
  • Spread thickened pudding over cooled cake.
  • Top with Dream Whip or Cool Whip flavored with ½ tsp Goodman's Coconut Flavor.

Optional:

  • Toast ½ cup shredded coconut in oven until light brown.
  • Sprinkle on top of whipped topping.
