Funfetti Cookies

Ingredients

     3 cups all-purpose flour

     2 cups granulated sugar

     1 teaspoon baking powder

     1 teaspoon baking soda

     1 teaspoon salt

     1 cup cold unsalted butter, cubed

     2 large eggs, room temperature

     1 teaspoon Goodman’s Double Strength Vanilla Extract

     ½ cup rainbow jimmies sprinkles

     Additional granulated sugar, for rolling

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
  3. In a large mixing bowl, beat the cold butter until softened and creamy. Add the sugar and beat until well combined.
  4. Add the eggs and Goodman’s Double Strength Vanilla Extract. Mix until combined.
  5. Add half of the flour mixture and beat on medium speed until just combined. Add the remaining flour mixture and mix until a dough forms, being careful not to overmix.
  6. Gently fold the rainbow sprinkles into the cookie dough.
  7. Scoop the dough into large balls and roll each one in granulated sugar. Arrange the dough balls on the prepared baking sheet, leaving about 1½ inches between them.
  8. Refrigerate the cookie dough balls for 15 minutes.
  9. Bake for 12–15 minutes, or until the edges are set and the centers still look slightly soft.
  10. Place the baking sheet on a wire rack and allow the cookies to cool for 5 minutes before transferring them directly to the rack. Serve warm or allow them to cool completely.
