Ingredients
● 3 cups all-purpose flour
● 2 cups granulated sugar
● 1 teaspoon baking powder
● 1 teaspoon baking soda
● 1 teaspoon salt
● 1 cup cold unsalted butter, cubed
● 2 large eggs, room temperature
● 1 teaspoon Goodman’s Double Strength Vanilla Extract
● ½ cup rainbow jimmies sprinkles
● Additional granulated sugar, for rolling
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
- In a large mixing bowl, beat the cold butter until softened and creamy. Add the sugar and beat until well combined.
- Add the eggs and Goodman’s Double Strength Vanilla Extract. Mix until combined.
- Add half of the flour mixture and beat on medium speed until just combined. Add the remaining flour mixture and mix until a dough forms, being careful not to overmix.
- Gently fold the rainbow sprinkles into the cookie dough.
- Scoop the dough into large balls and roll each one in granulated sugar. Arrange the dough balls on the prepared baking sheet, leaving about 1½ inches between them.
- Refrigerate the cookie dough balls for 15 minutes.
- Bake for 12–15 minutes, or until the edges are set and the centers still look slightly soft.
- Place the baking sheet on a wire rack and allow the cookies to cool for 5 minutes before transferring them directly to the rack. Serve warm or allow them to cool completely.
