Lemon Velvet Cake

Ingredients

  • 1 – 18.25 oz package lemon cake mix
  • 1 cup water
  • 1 tsp Goodman's Pure Lemon Extract
  • 1 – 3oz package lemon-flavored gelatin mix
  • ¾ cup corn oil
  • 2 large eggs
  • 2 cups confectioners’ sugar
  • ½ cup fresh lemon juice
  • 1 tbsp fresh lemon zest

Instructions

  1. Preheat oven to 350 degrees.
  2. Lightly grease and flour a 13x9x2 inch pan; set aside.
  3. In a large bowl, combine dry cake mix, water, Goodman's Pure Lemon Extract, gelatin mix, oil, and eggs; beat with an electric mixer for at least 3 minutes.
  4. Spread batter in prepared pan.
  5. Bake for approximately 35 minutes.
  6. When cake is done, prick entire cake with fork.
  7. Mix confectioner’s sugar, lemon juice and zest.
  8. Pour this mixture on top of warm cake.
  9. Serve plain or with whipped cream.
