Ingredients
- 1 – 18.25 oz package lemon cake mix
- 1 cup water
- 1 tsp Goodman's Pure Lemon Extract
- 1 – 3oz package lemon-flavored gelatin mix
- ¾ cup corn oil
- 2 large eggs
- 2 cups confectioners’ sugar
- ½ cup fresh lemon juice
- 1 tbsp fresh lemon zest
Instructions
- Preheat oven to 350 degrees.
- Lightly grease and flour a 13x9x2 inch pan; set aside.
- In a large bowl, combine dry cake mix, water, Goodman's Pure Lemon Extract, gelatin mix, oil, and eggs; beat with an electric mixer for at least 3 minutes.
- Spread batter in prepared pan.
- Bake for approximately 35 minutes.
- When cake is done, prick entire cake with fork.
- Mix confectioner’s sugar, lemon juice and zest.
- Pour this mixture on top of warm cake.
- Serve plain or with whipped cream.
