This Coconut Poppy Seed Cake recipe uses Goodman’s Natural Coconut Extract to create a moist and delicious cake with lots of coconut flavor!
Ingredients
- 8 oz cake mix
- 1 tsp Goodman’s Natural Coconut Extract
- 2 boxes instant coconut cream pudding
- ½ tsp Goodman’s Natural Coconut Extract
- 8 oz Dream Whip or Cool Whip
- ½ tsp Goodman’s Natural Coconut Extract
- shredded coconut optional
Instructions

Prepare cake mix as directed.

Add poppy seeds and 1 tsp Goodman’s Natural Coconut Extract to batter.

Bake, as usual, in a 9 x 13 pan sprayed with nonstick spray.

Remove from oven and let cool.

Prepare pudding using ½ cup less milk than box instructions require for each box.

Add ½ tsp Goodman’s Natural Coconut Extract to pudding.

Refrigerate.

Spread thickened pudding over cooled cake.

Top with Dream Whip or Cool Whip flavored with ½ tsp Goodman’s Natural Coconut Extract.
Optional:

Toast ½ cup shredded coconut in oven until light brown.

Sprinkle on top of whipped topping.
