White Chocolate Oatmeal Bars

Ingredients

  • 1 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 8 tablespoons unsalted butter, melted and cooled slightly
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon Goodman’s Pure Vanilla Extract
  • 1 cup old-fashioned rolled oats
  • 1 cup white chocolate chips
  • ½ cup plain M&Ms

Instructions

  1. Preheat the oven to 350°F. Line an 8×8-inch metal baking pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
  3. In a larger bowl, whisk the melted butter and brown sugar until smooth and well combined. Whisk in the egg and Goodman’s Pure Vanilla Extract until fully incorporated.
  4. Add the dry ingredients to the wet ingredients and stir with a spatula or wooden spoon just until no dry streaks remain. Do not over mix.
  5. Gently fold in the oats, white chocolate chips and M&Ms.
  6. Spread the batter evenly into the prepared pan, smoothing the top.
  7. Bake for 24–28 minutes, until the edges are lightly golden and the center is just set.
  8. Let the bars cool in the pan until firm enough to lift out. Slice and serve once cooled.
